Last week, Will once again proved we are soul mates and bought me a set of popsicle molds. While there are countless recipes for homemade popsicles all over the web, I was on a mission for healthy treats. In this heat, it’s easy to get carried away with the Cherry Limemades, Snow Cones and Milkshakes. There is no shortage of them here in Texas.

In summers past, I made Watermelon Lime Granita. Super refreshing but slightly labor intensive; I thought, why not just pour the mix into the molds? Unfortunately, I was out of limes and the lime juice I had on hand was questionable at best. Did it matter? What kid would turn down a watermelon popsicle?
